Você já ouviu falar em um fruto chamado mangostão? Originário do Sudeste da Ásia, o fruto típico de regiões tropicais é famoso, especialmente, pelo seu sabor e aroma. Mas agora uma nova faceta dele vem sendo pesquisada: o uso da sua casca na produção de corantes naturais para a indústria de alimentos, medicamentos e cosméticos.
O estudo vem sendo realizado no Laboratório de Tecnologia de Produtos de Origem Vegetal (LTPOV) da Uesb, campus de Itapetinga. O objetivo central é aproveitar os chamados pericarpos do mangostão, a casca de cor púrpura, para produção, formulação e aplicação do corante natural em alimentos e outros produtos.
Andréa Gomes, professora e pesquisadora que lidera a pesquisa, explica que essa cor presente na casca do mangostão é devido aos flavanoides antociânicos, um composto natural presente em frutos e flores, como uva, açaí, repolho roxo, jabuticaba, hibisco e tantos outros.
Além da cor, esse novo corante impacta na dieta de quem consome os alimentos. “Diferente dos corantes artificiais/sintéticos, os naturais são compostos bioativos, que além dos efeitos sobre a percepção das cores, apresentam atividade antioxidante, com alegações de funcionalidade como proteção às células contra danos causados pelos radicais livres, ação anti-inflamatória e antitumoral”, aponta Andréa.
Apesar dos corantes artificiais apresentarem mais estabilidade, poder tintorial e menor custo, problemas de alergias e outros malefícios à saúde humana vêm apontando uma cautela mundial quanto ao seu uso. “A tendência demonstrada pelo mercado em restringir o uso de corantes sintéticos em alimentos e as restrições impostas pela Organização Mundial de Saúde têm levado a indústria e os pesquisadores ao interesse por materiais naturais, em particular hortifrutícolas, folhas e flores, que são usados como corantes”, explica a pesquisadora.
No Brasil, o sul da Bahia e regiões do Pará, São Paulo e Espírito Santo são as maiores produtoras do mangostão. Apesar de cerca de 75% do peso do fruto ser da sua casca, o consumo dele está concentrado em sua polpa, o que gera um alto descarte. “O aproveitamento desses materiais apresentam várias vantagens econômicas e ambientais, como a utilização integral de matérias-primas biológicas, por exemplo”, acrescenta Andréa.
Da extração à aplicação – Até chegar ao corante e sua aplicação, os cientistas tiveram um longo caminho. O primeiro passo foi a obtenção da matéria-prima. Todas as cascas do mangostão utilizadas nessa pesquisa experimental vieram dos municípios de Una e Ipiaú, no sul da Bahia, direto para o Laboratório da Uesb.
Com os pericarpos em mãos, as etapas seguintes compreenderam a obtenção e a quantificação do extrato bruto, o estudo da estabilidade, a extração em maiores quantidades, a formulação do corante, a aplicação desse corante formulado e o tratamento estatístico dos dados.
“Os corantes concentrados foram testados em balas de gelatina e embalagens inteligentes (biofilmes) como indicadores colorimétricos de qualidade”, explica Andréa, que contou com a colaboração da professora Cristiane Patrícia de Oliveira, também da Uesb.
O trabalho ainda tem pesquisadores da Universidade Federal de Sergipe (UFS), da Universidade Federal de Viçosa (UFV) e Universidade Federal do Rio de Janeiro (UFRJ) como parceiros. Os resultados obtidos já foram publicados em eventos e revistas científicas.
