A linguiça caseira é uma iguaria que caiu no gosto dos brasileiros. É possível encontrar diversas versões de sabores, além de ser um produto com diferentes formas de fabricação, a depender da cultura ou da localidade. Em Itapetinga, esse é um alimento que ganha destaque na mesa dos consumidores.
Pensando nisso, a estudante Rainy Fernandes Rocha, do curso de Engenharia de Alimentos da Uesb, investigou a presença de bactérias em seu Trabalho de Conclusão de Curso (TCC). Intitulado “Screening de bactéria lática em embutidos artesanais“, o estudo foi orientado pelo professor Nivio Batista Santana, do Departamento de Tecnologia Rural e Animal, e o resultado aponta que todas as amostras de linguiça artesanal avaliadas apresentaram presença de bactérias benéficas, que ajudam a inibir microorganismos, reforçando a segurança e qualidade do produto.
A pesquisa analisou amostras comercializadas em Itapetinga no dia da fabricação, com o objetivo de garantir uma análise mais precisa do produto. O estudo investigou o papel das bactérias ácido-láticas (BAL) na inibição de agentes patogênicos, como Staphylococcus cereus e Salmonella.
As BAL são micro-organismos benéficos amplamente distribuídos na natureza. Elas são comumente encontradas em ambientes ricos em nutrientes, como alimentos fermentados, incluindo produtos lácteos, carnes e grãos. Essas bactérias podem contribuir para a conservação e qualidade sensorial dos alimentos, além de trazerem benefícios à saúde dos consumidores, especialmente para a saúde intestinal.
Segundo a estudante, as BAL podem ser inseridas intencionalmente em produtos cárneos para conferir sabor, aroma e textura agradáveis, além de proteger contra a ação de microorganismos patogênicos e deteriorantes. No entanto, essas bactérias também podem ocorrer de forma espontânea, oriundas do ambiente ou da própria matéria-prima. “Até o momento, observamos que todas as amostras avaliadas apresentaram presença de BAL, o que confere os benefícios citados aos produtos comercializados”, comenta Rainy.
Apesar da BAL contribuir diretamente para a inibição de agentes patogênicos, aumentando a segurança do produto, a pesquisadora ressalta: “outros cuidados devem ser mantidos, como a conservação adequada, incluindo refrigeração e embalagem apropriada, bem como o preparo seguro dos alimentos”.
Rainy também destaca que os resultados da pesquisa podem influenciar as práticas de produção e comercialização de linguiças artesanais. “A utilização de culturas láticas de forma intencional pode trazer benefícios adicionais às características sensoriais e à segurança do produto, mas também é necessária a conscientização dos manipuladores sobre as boas práticas de fabricação, a fim de reduzir os riscos de contaminação nos alimentos”, conclui.
