Uma pesquisa inovadora realizada em parceria com a Uesb revelou que o chocolate, tradicionalmente visto como vilão das dietas, pode ser um grande aliado da saúde. O estudo demonstrou que voluntários que consumiram o produto apresentaram uma redução nas medidas corporais, sugerindo efeitos positivos no metabolismo. O novo alimento manteve-se fiel aos padrões de sabor, textura e segurança microbiológica, provando que é possível unir prazer sensorial e benefícios terapêuticos.
A motivação central da pesquisa foi enfrentar o aumento das Doenças Crônicas Não Transmissíveis, aliando alimentação saudável e prazer sensorial, já que dietas equilibradas, muitas vezes, são associadas a alimentos pouco atrativos. Assim, surgiu a proposta de desenvolver um alimento inovador, feito com matérias-primas regionais, capaz de promover saúde, valorizar a cultura local e estimular uma economia sustentável por meio da geração de renda e fortalecimento da agroindústria.
A pesquisa envolveu o Instituto Federal Baiano e a Universidade Federal de Alagoas, em parceria com o Movimento Cacau Chocolate e Cultura, grupo voltado à promoção de chocolates artesanais e à valorização da produção regional. “O estudo reforça a importância de alimentos inovadores feitos com matérias-primas regionais, promovendo saúde”, aponta Maria Patrícia Milagres, do Programa de Pós-Graduação em Enfermagem e Saúde da Uesb, campus de Jequié.
Amostras do chocolate desenvolvido na pesquisa
Como foi realizado – O estudo nasceu do interesse em triterpenos, moléculas bioativas encontradas nas folhas da Mansoa hirsuta, uma planta típica da Mata Atlântica. Entre esses compostos, estão o ácido ursólico e o ácido oleanólico, conhecidos por suas propriedades antioxidantes, anti-inflamatórias e reguladoras do metabolismo, inclusive de glicose e lipídios.
As propriedades da planta apresentam ganhos positivos para a saúde humana, sendo assim, os pesquisadores se concentraram em formas de facilitarem seu consumo. Foi quando surgiu a ideia de desenvolver um chocolate 70% cacau, com 150 mg de triterpenos por unidade. Foram realizadas análises de qualidade, estabilidade dos compostos e testes de sabor.
Esse chocolate foi consumido por voluntários em um estudo de intervenção, que avaliou mudanças em peso, Índice de Massa Corpórea (IMC) e circunferência da cintura. Além de seu potencial para o consumo humano e resultados positivos nos testes com voluntários, os triterpenos também têm aplicações na indústria farmacêutica, cosmética e de biomateriais, reforçando o valor desses compostos naturais.
